Cooking roasted peppers with garlic:
Step 1: prepare the pepper.
For this dish, it is better to use peppers with thick and juicy walls. The ideal option is Bulgarian, but if there is none, you can take a regular salad. First of all, thoroughly wash the vegetables under cold running water and dry them with paper kitchen towels. Trimming the stalks and gutting the peppercorns from the seeds is not necessary!
Step 2: fry the pepper.
Next, put the pan on medium heat and pour the right amount of vegetable oil into it. As soon as it warms up, drop the first batch of pepper there. Fry it from all sides to a light golden or dark brown crust, for convenience, turning from side to side, holding the tails.
It is not necessary to bring the vegetables to full readiness at this stage of cooking, the peppercorns should remain slightly undercooked inside, so as soon as they are covered with a blush, use a kitchen spatula to put them in a colander and leave it to drain excess oil. Meanwhile, we fry the next batch and after that we cool the pepper to room temperature.
Step 3: preparing a gas station.
While the fried vegetables are cooling, we are preparing a dressing. Remove the husks from the cloves of garlic and squeeze them through a press into a deep plate. Pour vinegar there, add black ground pepper, if desired, and mix everything with a tablespoon to a homogeneous consistency.
Step 4: bring the dish to full readiness.
Then, very carefully peel the cooled pepper from the skin and make a small cut on each bottom or side with a kitchen knife to drain the juice. Then put the peppercorns in any deep dishes, for example, a plastic container. We pour each layer with garlic-vinegar dressing, cover the container with a tight-fitting lid, put in the refrigerator for a couple of hours and then serve the dish to the table.
Step 5: serve the fried peppers with garlic.
Fried pepper with garlic is served in a salad bowl or on a plate immediately after cooking, or in a cold form after insisting. Basically, this dish is considered an appetizer, as well as a great addition to soups and meat dishes. But also such a pepper is ideal as a filling for pies or pizza.
