Cooking zucchini with pepper and turmeric for the winter:

Step 1: clean the zucchini.

Peel the zucchini from the skins and seeds, if the vegetables are young, then their seeds are small and it is not necessary to peel them. But without fail zucchini need to be washed well.

Step 2: salt the zucchini.

Cut the squash into small pieces, put them in a container, salt, mix and leave for several hours, overnight, for example.
After the zucchini stand in salt, drain the resulting liquid from them and squeeze.

Step 3: prepare the salad.

Add half of the turmeric needed in the dried zucchini and mix.

Peel the onion from the husk, cut into rings and add to the zucchini in a container.
Pepper seeds and tails, cut into cubes or strips, and then add to the zucchini and onions. Shuffle.

Step 4: we prepare zucchini with pepper and turmeric for the winter.

Arrange vegetable salad with zucchini in prepared sterilized jars.
Combine water, vinegar, sugar, horseradish, bay leaf, mustard seeds and remaining turmeric in a saucepan. Boil and pour hot marinade in jars of vegetables.
After sterilize the jars with blanks in boiling water or in the oven. Banks in volume 250-300 milliliters sterilize for 10 minutes, and a larger container, that is, a capacity 500 milliliters, - 15 minutes.
After tightly close the jars with lids, wrap them in a blanket or blanket, turn them upside down and let them cool, and then hide them in a basement or storage room.

Step 5: Serve the zucchini with pepper and turmeric.

Serve with pepper and turmeric, either on a separate plate, as an appetizer, or offer a salad as an appetizer to hot dishes of meat, poultry, fish and eggs. The blank on the plate looks very good, but it tastes even better!
